Keto Stuffed Peppers Goat Cheese Beef

I win the meatloaf contest. All other meatloaves can take a hike because this ane is the best keto meatloaf… scratch that.. the BEST MEATLOAF you lot'll e'er swallow and yous tin notice it in The Four-Hour Chef by Tim Ferriss (amongst many other delicious, paleo and keto-friendly recipes). I made my own tweaks merely the full general recipes was his genius.

Keto Meatloaf – Blimp w/ Goat Cheese & Spinach

Servings: 6

Prep Time: fifteen minutes |Cook Time: fifty-sixty minutes |Total Fourth dimension: i hour 15 minutes

Nutritional Facts: 5g Net Carbs| 382 Calories | 26g Fatty | 6g Carbs | 35g Protein | 1g Fiber

Ingredients:

  • two lbs fatty ground beef – preferably grass fed
  • 2 eggs
  • 3 scallions (chopped)
  • 1 large yellow onion (chopped)
  • iii garlic cloves, minced
  • a handful of raw spinach
  • 3-4 oz of chevre caprine animal cheese (get the long roll and you should be good!)
  • ii tbsp tomato plant paste
  • 4 shakes of cayenne pepper
  • a pinch of oregano
  • ii pinches of salt
  • ane sprig of rosemary

Steps:

  1. Preheat oven to 425 degrees F.
  2. Add 2lbs of meat and 2 eggs into mixing bowl. Add together finely chopped scallions, garlic, and onions. Mix information technology up together.
  3. Add cayenne, oregano, salt, pepper and mix upwards again.

  4. Throw down some plastic wrap on the counter and so whorl out your meat on top of information technology. Try to flatten it out and create a rectangle (mine was a little long) and so add the spinach and goat cheese to the middle.

  5. Using one side of the plastic wrap flap ane side into the middle, and and then exercise the same to the other, and then they create a roll. Compression and smooth out the ends so the filling stays inside the meatloaf while cooking.
  6. Dress upwardly the top with your tomato plant paste (or leave it dry to make information technology more than keto friendly), sprinkle some fresh rosemary on superlative.

  7. Cook about fifty-60 minutes until the middle hits about 150 degrees.

  • 4 shakes of cayenne pepper
  • a pinch of oregano
  • 2 pinches of salt
  • 1 sprig of rosemary

Instructions

  1. Preheat oven to 425 degrees F.
  2. Add 2lbs of meat and 2 eggs into mixing bowl. Add finely chopped scallions, garlic, and onions. Mix it upwardly together.
  3. Add cayenne, oregano, salt, pepper and mix up again.

Made this last night. I dearest it. Wife and kids didn't like the goat cheese. I know that is an acquired gustatory modality. Might substitute another cheese adjacent time.

I only had 2 oz of Goat cheese and then I mixed in 2 oz of Feta, and its AMAZING!!

@rimarkimar It would be different flavor entirely, but maybe mozzarella? Hmmmm… I don't recollect Feta would piece of work. You might like goat cheese in this combo though!

I made this last night! I added chopped red pepper and fresh parsley and basil to the meat mixture and and so roasted red peppers to the stuffing…only considering I had those things and wanted to employ them. It was by far the well-nigh delicious meatloaf I have e'er had. Cheers!!  I await forward to trying out many more of your recipes!!

Hubby LOVES this meatloaf and doesn't even miss traditional meatloaf at present. I use foam cheese and omit the spinach, every bit I've a bad habit of letting it go bad earlier I get to use it, and it's very yummy! Thanks for the awesome recipe!

prissy idea – try adding fresh sliced mushrooms, black olives sliced and even a Tbsp of Italian Olive Salad mix to heart, too. I hooked upward with Dr. Berg online two years ago. His naturopathic nutrition plan has turned my life around. And so glad more n more people r turning away from traditional medicine and eating the Right way!

I tried information technology tonight. Most meatloaf recipe's are a page long. Hense why I have been putting off making this keto dish. This is so simple to make and I similar it allot. My wife did not care for the goat's cheese. I liked information technology allot actually. Adjacent time I will apply creme cheese for her as many have done.

This is very like to a pinwheel meatloaf recipe I make with spinach and cottage cheese. I take to exist carefully of cottage cheese now because there is 4 carbs in half a cup. I'k going to brand this for sure. Looks awesome.

Didn't do so well with flip, information technology flopped. So I but put a layer of meat in a pan, added the spinach and mozzarella and kind of congenital the meat top around it. Added pizza sauce to the top and Italian seasonings. Yum!cheers!
